Its beginning to look a lot like Christmas!

Our Thanksgiving was spent just the six of us enjoying a nice quiet holiday cooking and eating together. Now that Thanksgiving has past we are fully jumping into the Holiday Season!


We decorated,  inside and out this week....and its beginning to look a lot like Christmas...but I gotta say, I still LOVE that its warm out and not snowing!

Thanksgiving Feast

     Its that time of year again...

Meeeka's Feast

Meeka's Feast was Wednesday.
The kids picked their menu.
We made Green Beans and Cornbread muffins

Black Bean Brownies


Shhhhh........yes, I said black beans......just don't tell the kids! They thought they were the most AWESOME brownies ever; seriously moist, chewy, chocolaty deliciousness!



All I did was open a can of black bean and rinse them. Then put them in the food processor with 1 cup water and pureed them; add them to the mix (no oil and eggs) and bake as directed! That’s it...simple!! And not only do you get fantastic brownies, but they don't have the saturated fat in them and have added protein and fiber. So really you can't go wrong...so go...try them!!! You won't regret it!!

Scrumdiddlyumptious Baked Chicken

My Kids LOVE Chicken Drumsticks! 

I made a new recipe last night where I baked them, along with some thighs and breasts. They came out delicious and it was a great weeknight meal. Made spinach salad and sweet potato fries and had some leftover corn. Super easy and kids were asking for more chicken!



Scrumdiddlyumptious Baked Chicken


Ingredients:
·      Chicken Pieces
·      Olive Oil
·      Garlic Powder
·      Paprika
·      Salt and Pepper


Directions:
·      Heat oven to 375
·      Place chicken pieces in 13x9 baking dish and rub the chicken with olive oil (just enough to coat on all sides)
·      Sprinkle with garlic, paprika, salt and pepper
·      Bake for about 20 minutes and then flip chicken and sprinkle with spices again.
·      Bake another 20 minutes or until largest chicken piece reaches 165 degrees. The skin should be a nice golden brown.
