This was a fantastic meal and super easy to prep ahead of time; so when we got home from soccer all I did was reheat the chicken and corn. WaLa...a wonderful salad! If your following the 21 day fix or Hammer and Chisel meal plan the containers are on the picture.
Buffalo Chicken Salad
Ingredients:
- Lettuce
- Chopped tomato
- Corn / Black Beans (in whatever ratio you want to combine them to make a yellow)
- Chicken breast
- Buffalo Sauce
- Blue Cheese
- Greek Yogurt Ranch Dressing
Directions:
- Cut chicken in small chunks and sauté with buffalo sauce until cooked through (about 5 minutes)
- Heat corn and black beans if desired (I like mine warm)
- Assemble salad
